CHEF TONY'S SWEET POTATOES

Ingredients

  • 10 pounds of canned yams
  • 3 cups brown sugar
  • 3 cinnamon sticks
  • 1 cup butter
  • 1 cup cornstarch
  • 1 bag large marshmallows

Preparation

Step 1

Pre heat oven to 325 degrees. Drain yams and put into pan. Save half of the juice. To the saved juice add brown sugar, cinnamon and butter. Bring to a boil.
Add 1 cup of corn starch. Bake for 25 minutes. Add one bag of large marshmallows and return to oven until marshmallows are brown, about 1 minute.
