Ingredients

  • Salad:
  • 3/4 lb thin bacon slices
  • 1/3 cup vegetable oil
  • 8 large shallots, thinly sliced
  • 3 cups unsweetened apple cider, boiled until reduced to 1/3 cup
  • 3 T cider vinegar
  • 2 t golden brown sugar (optional)
  • Freshly ground pepper
  • mixed greens
  • 1/2 lb jicama
  • 6 large green onions, cut diagonally into thin slices
  • 1 med Granny Smith apple, unpeeled, cored and cut into matchstick julienne

Preparation

Step 1

Cook bacon in heavy large skillet until crisp. Transfer bacon to paper towels and drain. Crumble bacon into 1-inch pieces. Pour off all but 2 tablespoons fat from skillet. Add vegetable oil to skillet and heat 1 minute over medium heat. Add shallots and cook until golden brown, stirring frequently, about 15 minutes. Add reduced cider, 3 tablespoons vinegar and sugar and simmer 1 minute. Season generously with pepper. Taste, adding more vinegar if sharper flavor is desired. Set aside.
Prepare salad of mixed greens, jicama, green onions and apples. Toss with dressing and top with cooked bacon.
