Raspberry-White Chocolate Cheesecake Bars

Ingredients
- 1 box of chocolate wafer cookies (9oz)
- 5 tablespoons unsalted butter,melted
- 1 c. frozen raspberries, thawed
- 1/4 c. plus 2 tablespoons sugar
- 2 8oz pkgs of cream cheese, room temperature
- 2 large eggs plus 2 large egg yolks
- 1 tablespoon flour
- 1 teaspoon vanilla
- 4 oz white chocolate, melted and cooled

Step 1
Preheat oven to 350 degrees. Blend chocolate wafers in a food processor. In a bowl, mix the crumbs with the melted butter until all is moist. Pour crumb mixture into a 9in square baking pan. Press into bottom and 1/2 inch up the sides of the pan. Bake for 8 minutes and let cool.
Reduce the oven to 250 degrees. Combine raspberries, 1 tablespoon of sugar in a food processor. Blend until smooth. Strain the mixture thoroughly. In a separate bowl, beat cream cheese and 1/4c plus 1 tablespoon of sugar together. Add eggs and yolks, one at a time. Add flour and vanilla, mix until combined. Fold in white chocolate.
Pour cheesecake mixture over the chocolate crust evenly. Drop spoonfuls of raspberry puree over the top and marble with a knife. Bake until set for 1hr 15-20 minutes. Let cool completely.
Refrigerate for at least 2 hours. Cut and serve.
