Ingredients
- 1 pkg. phyllo dough
- 1/2 cup chopped onion
- 1 Tablespoon oil
- 1 pkg. (10 oz.) frozen chopped spinach, thawed and drained
- 1 cup crumbled feta cheese (4 oz.)
- 1 cup cottage cheese
- 1 egg, beaten
- 3/4 teaspoon salt, or to taste
- 1/2 teaspoon pepper

Step 1
In a saucepan, saute onion in oil until tender. Add spinach; cook and stir until all liquid evaporates; set aside and cool. Stir in cheeses, egg, s&p.
Roll out sheet of phyllo and spray with butter Pam. Cut into 3 or 4 strips. Cut the strips into squares. Put some spinach mixture in the center, and fold over diagonal corners to each other. Press edges well to seal. Transfer to ungreased cookie sheet, and either freeze, or bake in preheated 400 degree oven for 30-35 minutes or until pastry is golden brown. Serve immediately. Great hors d'oeuvre, but messy phyllo all over the floor!
