  • 1 medium onion, sliced
  • 1/4 cup butter or bacon fat
  • 2 tablespoons cornstarch
  • 1 cup water
  • 2 cans (14 1/2-oz. each) stewed tomatoes
  • 1 cup diced green pepper
  • 2 cloves garlic, crushed
  • 2 teaspoons salt
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon pepper
  • 1 pound raw shrimp, shelled, deveined
  • 2 pkgs. (10-oz. each) frozen okra, defrosted, cut into 1-in. pieces

Preparation

Step 1

In 3-qt. casserole place onion and butter. Microwave at High (10) 3 Minutes, stirring after 2 minutes, until onion is limp.
In small bowl stir together cornstarch and water. Add to onion along with tomatoes, green pepper, garlic, salt, nutmeg, pepper, shrimp and okra. Stir well. Cover. Microwave at Medium High (7) 31 to 33 Minutes, stirring after 1/2 of time.
