Ingredients
- 1 onion, chopped
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 1/2 lb chicken, cooked & chopped (or ground)
- 1 1/2 cans white beans
- 1 cup chicken broth
- 1 (4oz) can chopped green chilies
- 1 Tbsp cumin
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- Shredded Monterey Jack cheese

Step 1
Sauté the onion and garlic in olive oil in a Dutch oven until the onions are tender. Stir in the chicken, beans, broth, chilies, cumin, salt, and cayenne. Cook over low heat for 20-30 minutes or until to the desired consistency, stirring occasionally. Serve topped with cheese.
