Chewy Surprise Cookies

Ingredients

• 1-1/2 Cups Butter Flavor Shortening
• 1-1/2 Cups Creamy Peanut Butter
• 2 Cups Sugar (divided)
• 1-1/2 Cups Brown Sugar
• 4 Eggs
• 3-3/4 Cups Flour
• 2 tsp. Baking Soda
• 1-1/2 tsp. Baking Powder
• 3/4 tsp. salt
• 72 Rolo Candies (unwrapped)

Preparation

Step 1

Cream shortening, peanut butter, 1-1/2 cups sugar, and brown sugar.

Add eggs, one at a time, beating well after each addition.

Combine dry ingredients, and gradually add to first mixture.

Chill batter for 1 hour.

Heat oven to 350°.

Shape 4 tsp. dough around a Rolo, so candy is completely covered.

Roll in remaining 1/2 cup sugar. Place 2" apart on ungreased cookie sheet.

Bake for 10-12 minutes (until set).

Cool 5 minutes on cookie sheet before removing from cookie sheets.
