As the years went by there were a few dishes that always appeared on our table and raspberry jello salad from my Aunt Sharon was one of my personal favorites. I loved the stuff. She may by a doctor, but Aunt Sharon totally rocks in the kitchen. I always loooooved jello as a kid, and I secretly still do. In fact I laugh a little that everyone thinks jello is such a waste when I would totally devour it. This jello salad is different than a normal jello salad (I do stay away from the cottage cheese version.) because it has applesauce in it and sour cream and marshmallows on top. I don’t know why, but it’s delicious and everyone needs one jello salad that will totally make the kids happy for such a big holiday meal.

1 Cup Boiling Water

Stir together the jello and boiling water until the powder is all dissolved. Add the raspberries and applesauce and stir carefully until combined. Pour into a 8x9 inch pan

In a bowl, combine the sour cream and marshmallows and spread on top of the jello. Serve immediately.

This jello can be made a day to 3 days ahead and either add the marshmallow topping before serving or wrap tightly with saran wrap.

I loved the raspberry jello salad. Delicious, and easy to prepare. Sweet and refreshing. I mad a double recipe and placed it in a deep bowl. Rather than squares, everyone just scooped a helping! I made this for a pot-luck community pool party and it went over very well. Can’t wait to try your other recipes! I am hooked!!
