Shrimp Scampi with Green Onions & Orzo

Ingredients
- 3/4 cup orzo
- 4 T butter, divided
- 2 T olive oil
- 2 cloves of garlic
- 1 lb uncooked large shrimp
- 4 green onions, thinly sliced
- 1/3 cup dry white wine

Preparation
Step 1
Cook orzo until tender but still firm to bite.
Melt 2 T butter and oil in heavy large skillet over med-high heat. Add garlic and stir 10 seconds. Add shrimp and saute 2 minutes. Add green onions and toss until shrimp are opaque in center, about 1 minute more.
Add wine and toss until wine boils, about 1 minute. Mix in remaining 2 T butter and season with salt and pepper to taste.
