Ingredients
- 2 lb white potatoes, peeled and diced
- 15 ritz crackers, crushed
- 1 small red pimento, finely chopped
- 1/4 cup of cilantro, finely chopped
- 2 tblsp zesty italian dressing
- 1 1/4 cup of shredded chicken
- 2/3 cup of sharp cheddar cheese, shredded
- 2 cups of oil
- 2 tblsp of flour

Preparation
Step 1
1. boil the potatoes until they are soft. Mash them with hthe ritz cracker crumbs and flour. Refrigerate for 1 hour or until they are very cold.
2. Saute the pimiento and cilantro in a medium pan on medium heat for 5 minutes. Add the chicken and warm. Remove from heat and add the cheese.
3. In a fyring pan heat the oil to 375. Form a disk with the potato mixture and stuff with a 1/4 cup of the chicken mixture. Form it into the shape of a large potato and fry for about 5-6 minutes or until golden brown.
