BROCCOLI-CORN CASSEROLE

Ingredients

• 2 pkg. frozen chopped broccoli
• 3 C creamed cottage cheese
• 3 eggs
• 6 TBL butter (softened)
• 1/3 C flour
• 1/4 C finely minced onions
• 8 oz can whole kernel corn (strained)
• 1/2 LB chopped cheddar cheese
• 1/2 tsp salt
• 1/4 tsp pepper
• bread crumbs
• bacon crumbs

Preparation

Step 1

cook broccoli - drain well

combine cottage cheese, eggs, butter &
flour in bowl
put in blender - little at a time - blend
until smooth

fold in broccoli, corn, cheese & onion
season

put in 2 1/2 qt greased casserole
sprinkle w/ bread crumbs
sprinkle w/ bacon crumbs

bake @ 350 - 1 hr
