This is based on a recipe that one of EMC customers gave me when searching for a good entree for a dinner party I was having. It was a big hit!

Ingredients

  • 3 lbs pork tenderloin
  • herb infused olive oil (Wegmans has a great one!)
  • salt & pepper
  • package of sliced mushrooms (baby bellas are good), chopped
  • 1-2 cloves garlic, minced
  • 10 oz package frozen spinach, thawed and drained
  • container of herb cheese spread (such as Aloutte or Boursin. You could also use chive cream cheese)

Preparation

Step 1

To prepare stuffing:
In large skillet, add 1 tablespoon of olive oil on medium high heat. Add mushrooms, garlic, salt and pepper. Saute until brown. Add spinach and herb cheese spread to desired creaminess.

For Pork:
Open/cut pork into rectangular shape. Liberally Salt & Pepper both sides of pork and rub with herbed olive oil. Sear both sides in frying pan until lightly browned.
Preheat oven to 375. Place pork on baking sheet. Spread spinach mixture onto pork. Roll and tie with string to help keep closed.

Bake for 30-45 minutes until juices run clear.
