Ingredients

  • 3 teaspoons olive oil
  • 1 1/2 pound beef chuck roast, cut into 1-inch cubes (or buy it pre-cut)
  • 1 medium onion, cut into wedges
  • 1 cup sliced carrot
  • 1 medium green bell pepper, seeded, deribbed, and sliced
  • 12 ounces beer (or use ginger ale with 1 tablespoon of vinegar)
  • 6 ounces tomato paste
  • 1 packet Italian salad dressing seasoning
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon sugar
  • Salt and pepper to taste

Preparation

Step 1

Heat oil in a large skillet over medium-high heat; add the beef and cook (in batches) until browned. You're not cooking it all the way through, just sealing in the juices. Transfer each batch to slow cooker. Place onion, carrot and bell pepper over beef. Add beer (or ginger ale/vinegar), tomato paste, seasoning packet, Worcestershire sauce, and sugar to skillet. Whisk up all of the browned bits from the bottom of the pan, stirring until smooth; pour over beef and veggies; blend well. Cover and cook on Low for 6 to 8 hours, or until beef is very tender and mixture has thickened; salt and pepper to taste.

SERVING SUGGESTION: Mashed russet potatoes and steamed kale.
