Ingredients

  • 3-4 Pieces of Boneless Chicken Breast
  • 2 Cups Italian Style Bread Crumbs
  • 2 Eggs
  • 1/4 cup Milk
  • Cooking Oil
  • 2 Tablespoons Butter
  • 2 Tablespoons Flour
  • 1 Cup Chicken Broth
  • 1 Cup White Wine
  • 1 Cup Pepperoncini Juice -from the jar (Victoria or Cento are my favorite brands)
  • 1 Large Tomato-sliced thin
  • 1 Pound of Mozzarella Cheese-sliced

Preparation

Step 1

Preheat oven to 350 degrees. Slice chicken breast thin. You can get two to three slices from each breast.

Whisk egg and milk together in large bowl. Pour bread crumbs on shallow plate, such as a pie plate. Dip each piece of chicken in egg and then bread crumbs until all chicken is breaded.

In a large skillet, with cooking oil about 1/4 inch high up the sides, using medium heat, fry all the chicken until light brown, but not cooked through. Drain on paper towel and set aside.

In sauce pot, melt butter and whisk in flour. Cook for about a minute. Add broth, wine and pepperocini juice. Whisk, and let come to a simmer, stirring occasionally. If desired, add in a pepperocini pepper. Cut open if you want the sauce to have some heat to it…Add more if you want it even hotter.

Arrange Chicken flat in a baking dish, Top each piece of chicken with a slice of tomato, mozzarella cheese, and then desired amount of pepperocini peppers. Pour sauce over chicken and bake, until bubbly and cheese is melted, about 20 minutes.
