Harvest Apple Cake with Cream Cheese Frosting

Ingredients
- Cake:
- 2 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 2 cups all-purpose flour
- 1 tsp. vanilla
- 2 tsp. cinnamon
- 1 tsp. baking soda
- 1/2 tsp. salt
- 4 cups grated apples (peeled)
- 1/2 — 1 cup nuts
- Frosting:
- 8-oz. package of cream cheese, softened at room temperature
- 3 Tbsp. butter, melted
- 1 tsp. vanilla
- 1-1/2 cup powdered sugar

Step 1
Preheat oven to 350°F. Beat eggs and oil until foamy. Add the next 6 ingredients and mix with hand or stand mixer until well incorporated. Mix grated apples in gently. Add nuts in by hand until well combined.
Pour into a lightly greased and floured pan (9'' x 13'' or 2 rounds for a layer cake) and bake for 45 minutes — 1 hour. Check regularly while baking to make sure the top doesn't get too done. It should be a nice golden color and cooked all the way through — a knife should come clean when tested in the center. Cool completely.
While the cake is cooling, prepare the frosting by adding the cream cheese and butter to a bowl. Cream together using a hand or stand mixer. Add in vanilla and powdered sugar and fully incorporate. Frost the cake once it's cool.
