Ingredients

  • 1 pound black eyed peas, sorted, rinsed and soaked overnight
  • 3 slices cooked bacon, crumbled
  • 3 cups water
  • 1 1/2 cups sliced carrots
  • 3/4 cup chopped onion
  • 2 cloves garlic, pressed
  • Salt and pepper to taste
  • 2 pounds beef rump roast, trimmed and cubed
  • 1 teaspoon liquid smoke
  • 3/4 cup chopped green bell pepper, seeded and

Preparation

Step 1

Combine all ingredients in slow cooker. Cover and cook on Low for 8 to 10 hours, or until beef is tender.

SERVING SUGGESTION: Serve over brown rice; add some coleslaw (use a ready-made mix and toss with mayo and a little rice vinegar) and a bowl of raw baby carrots.
