Sweet and Spicy Pork Chili 0 Picture

Ingredients

  • 1 1/2 pounds boneless pork, cubed
  • 1 cup white beans, sorted, rinsed and soaked overnight
  • 1 cup water
  • 1 (14.5-oz.) can diced tomatoes
  • 1 (6-oz.) can tomato paste
  • 1 (20-oz.) can pineapple chunks in juice, un-drained
  • 3.5 ounces canned diced green chilies
  • 3/4 cup chopped onion
  • 2 teaspoons chili powder (more or less to taste)
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder

Preparation

Step 1

DO AHEAD TIP: Soak beans overnight.

Combine all ingredients in slow cooker. Cover and cook on Low for 8 to 10 hours, or until pork is cooked through.

SERVING SUGGESTION: Serve in bowls, garnished with chopped cilantro and chopped green onions; add some corn muffins.
