Ingredients
- 1 1/2 pounds boneless pork, cubed
- 1 cup white beans, sorted, rinsed and soaked overnight
- 1 cup water
- 1 (14.5-oz.) can diced tomatoes
- 1 (6-oz.) can tomato paste
- 1 (20-oz.) can pineapple chunks in juice, un-drained
- 3.5 ounces canned diced green chilies
- 3/4 cup chopped onion
- 2 teaspoons chili powder (more or less to taste)
- 2 teaspoons cumin
- 1 teaspoon garlic powder

Preparation
Step 1
DO AHEAD TIP: Soak beans overnight.
Combine all ingredients in slow cooker. Cover and cook on Low for 8 to 10 hours, or until pork is cooked through.
SERVING SUGGESTION: Serve in bowls, garnished with chopped cilantro and chopped green onions; add some corn muffins.
