Ingredients

  • 1 (10-oz.) package frozen chopped spinach, thawed
  • 1 1/2 cups uncooked brown rice
  • 3 cups water
  • 3.5 ounces canned diced green chilies
  • 1 (16-oz.) package frozen whole kernel corn
  • 1 clove garlic, pressed
  • 1 cup shredded low fat Cheddar cheese

Preparation

Step 1

Combine all ingredients, except cheese, in slow cooker. Cover and cook on Low for 2 to 4 hours, or until rice is cooked through and veggies are tender. Ladle onto dinner plates; sprinkle with cheese and serve.

SERVING SUGGESTION: Serve a big salad on the side.
