Ingredients

  • chuck steak
  • 1 or 2 green pepper, coarsely chopped
  • 1 or 2 large onions, coarsely chopped
  • 1 can fire roasted tomatoes
  • 1/2 can mild chiles and tomatoes
  • 2 or 3 cloves of garlic, chopped
  • 1 tbs. mustard
  • 2 tbs. Worcestershire sauce
  • 1 tbs. brown sugar (You can use white sugar if you don't have brown sugar.)
  • 1 tsp. vinegar if desired
  • catsup, about 1/2 cup more or less
  • 1 tbs. corn starch

Step 1

Brown steak on grill

Mix together remaining ingredients except for catsup and cornstarch.

Stir cornstarch into catsup, blending until smooth. Stir this mixture into the rest of the vegetables. Pour into casserole dish. Place browned chuck steak on top of the vegetable tomato mixture.

Cover with lid. Cook in 200 degree oven for 3 to 4 hours. If you don't have that long you can turn up the temperature to 220 degrees and test the vegetable for tenderness after 2 hours. Be careful not to overcook. The vegetables will take longer to be tender than the meat will. If you leave tin the oven too long, the vegetables will turn into mush.
