Ingredients
- 2 teaspoons caraway seeds
- 1 teaspoon dried oregano
- 1/2 teaspoon freshly ground black pepper
- 2 pounds pork roast
- 1 teaspoon olive oil
- 1/2 cup water
- 2 tablespoons apple cider vinegar
- 1 1/2 tablespoons cornstarch
- 8 ounces low fat sour cream

Preparation
Step 1
In a small mixing bowl, combine caraway seeds, oregano and pepper. Rub this dry
mixture into the pork. Place pork in slow cooker. Combine oil, water and vinegar; pour over pork. Cover and cook
on Low for about 10 hours, or until pork is cooked through. About 30 minutes before you are ready to serve,
carefully remove about 1 cup of the cooking juices from the slow cooker; place in a saucepan and whisk with corn
starch till well blended. Bring to a boil, then reduce heat and allow to thicken slightly. Remove from heat and
gradually add sour cream, stirring well to incorporate. Serve gravy over pork roast.
SERVING SUGGESTION: Baked sweet potatoes, steamed green beans and whole grain rolls and butter.
