MRS. SANTA'S RASPBERRY SALAD

Ingredients
- 1 envelope unflavored gelatin
- 1 pkg. raspberry flavor gelatin for 8 servings
- 1 8 ounce can crushed pineapple
- 1 3 ounce can pecans, chopped
- 2 10 ounce packages frozen raspberries in syrup
- 1 8 ounce container sour cream
- Small holly leaves for garnish

Step 1
Early in day or day ahead: Into medium bowl, evenly sprinkle unflavored gelatin over 1/2 cup water; let stand 1 minute to soften gelatin slightly.
Stir in raspberry flavor gelatin and 2 cups boiling water until gelatin completely dissolves.
Add pineapple, pecans, and frozen raspberries, stirring and using spoon to break up fruit.
Refrigerate until gelatin mixture mounds slightly when dropped from a spoon (gelatin may not need to be refrigerated if raspberries are frozen solid).
Spoon half of gelatin mixture into 8-cup mold.
Gently spread sour cream over gelatin mixture 1/2 inch from side of mold; spoon remaining gelatin mixture over sour cream.
Chill at least 3 hours. Remove from mold onto chilled platter.
