Ingredients
- 3 small red onions, thinly sliced
- 1 cup pearl onions
- 2 tablespoons butter
- Salt and pepper to taste
- 2 1/2 pounds boneless pork loin
- 3/4 cup sherry (or use white grape juice with a splash of vinegar)
- 1 1/2 tablespoons cornstarch
- 2 tablespoons water

Preparation
Step 1
In a skillet, sauté red and pearl onions in the butter till softened, about 5 minutes; season with salt and pepper to taste. Place pork in slow cooker; add onions and sherry. Cover and cook on Low for about 9 hours. Remove pork from slow cooker and let it sit for a few minutes before slicing, to redistribute its juices. While pork is resting, combine cornstarch and water till smooth; add to liquid in slow cooker and whisk till sauce thickens.
SERVING SUGGESTION: Steamed red potatoes and steamed asparagus.
