Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic, chopped
- 1/2 cup coarsely chopped celery
- 2 medium carrots, coarsely chopped
- 2 (28-oz.) cans whole Italian-style tomatoes, undrained
- 2 (14.5-oz.) cans low sodium chicken broth
- 2 cups water
- 1 teaspoon dried basil leaves
- 1/2 teaspoon pepper

Preparation
Step 1
In a large skillet, heat oil over medium-high heat; add garlic, celery and carrots; cook for about 5 minutes, stirring frequently, until carrots are tender; place in slow cooker. Add tomatoes, breaking them up coarsely, then add remaining ingredients. Cover and cook on Low for 6 to 8 hours.
SERVING SUGGESTION: A big spinach salad and some crusty bread.
