Ingredients

  • 6 boneless pork chops (about 1/4" thick)
  • 2 small red bell peppers, seeded, deribbed and cut into
  • 1/4 -inch thick strips
  • 1 medium onion, thinly sliced
  • 1 (28-oz.) can whole tomatoes, with juice
  • 4 cloves garlic, pressed
  • 1/4 teaspoon thyme
  • 1/4 teaspoon fennel seeds
  • 1/2 teaspoon basil
  • 3 strips of orange peeling (just use clean peel from an
  • orange, not too much)
  • Salt and pepper to taste

Preparation

Step 1

Place all ingredients in slow cooker, blend well. Cover and cook on low heat setting for 7 to 9 hours (or high 3 to 4 hours). Before serving, taste the sauce and correct the seasonings, if necessary.

SERVING SUGGESTION: Steamed red potatoes, baby carrots and broccoli.
