Ingredients

  • 1/2 lb. spaghetti
  • 1/4 cup soy sauce
  • 1/2 cup smooth peanut butter - softened in microwave 15 seconds on high
  • 2 tablespoons cider or rice wine vinegar
  • 1 tablespoon sesame (or canola oil)
  • 2 tablesoons hot sauce
  • Red Pepper Flakes - to taste
  • 3 green onions - chopped
  • 1/2 red pepper - chopped
  • 1/2 cup snow peas - sliced thin
  • sesame seeds

Preparation

Step 1

1. Cook pasta as directed, drain and run cold water over to stop cooking. Drain and chill.

2. In bottom of large bowl, whisk together soy sauce, peanut butter, vinegar, oil, hot sauce, red pepper. Add noodles and veggies - toss. Sprinke with green onions and sesame seeds.
