Copycat's Boston Market Sweet Potato Casserole Recipe 1 Picture

Ingredients

  • Filling
  • 2 large Sweet Potatoes
  • 1-2 Tbsp Sugar (taste before adding too much) can use Splenda instead
  • 1 Egg
  • 1/2 cup Butter, softened
  • 1 teaspoon Vanilla Extract
  • Crunch Topping
  • 1/3 cup melted Butter
  • 1/3 cup Flour
  • 1 cup Brown Sugar
  • 1 cup chopped Pecans
  • 1 tablespoon Cinnamon

Preparation

Step 1

1.Boil potatoes until tender or cook in microwave til tender.
2.Remove potato skins when cooled.
3.Put potatoes into a large bowl and whip them until fluffy.
4.Add remaining filling ingredients.
5.Pour into a greased casserole.

Add either miniature marshmellows or the below topping.

6.Mix together Crunch Topping ingredients until crumbly.
7.Top potato mixture with the Crunch Topping.
8.Bake at 350 degrees F for 45 minutes.
