Amish Chicken Soup with Cheese

By

This thick, creamy soup is made by adding egg noodles, chicken and vegetables to cheese soup, which is then fortified with milk, offering a wonderful, comforting bowl of soup which makes a great lunch or dinner. Because of the thickness of the soup and cheesiness, you will find kids love this just as much as the grownups. This recipe makes a change from chicken noodle soups which are based on clear broth, so if you fancy adding more dairy to your broth try this recipe. You will find it to be filling and substantial, as well as tasty and also good because of the different textures.

Preparation

Step 1

Put the milk and butter in a big pot and bring the mixture to a boil over a high heat.

Stir in the egg noodles, and then add the chopped vegetables.
Bring the mixture back to the boil, cover the pot, and simmer it for 8 minutes.

Stir the mixture every couple of minutes.

When the noodles are cooked and the vegetables are tender, turn the heat down to low.

Add the chicken and the cheddar cheese soup and heat the mixture through, stirring now and then so nothing sticks to the bottom of the pot.

When the soup is hot, serve it immediately.
