Jicama Slaw

Chef’s Note: Jicama is a tropical root vegetable found in markets throughout Mexico and the American Southwest. Its brown outer skin hides a crunchy white lesh that is intensely refreshing during hot weather or when combined with our spicy Creole Barbecue Shrimp (see recipe).

- 1 1/2 cups peeled and julienned jicama
- Juice of 1 lime
- Salt and freshly ground black pepper to taste

Step 1
Place jicama in a small bowl. Season jicama with lime juice, salt and pepper.
