Ingredients

  • Sauce:
  • 8 Tbs. butter
  • 1 Tbs. olive oil
  • 4 cooked, chopped chicken breasts
  • 2 1/4 tsp. salt
  • 1 1/4 tsp. pepper
  • 1 lb. mushrooms, sliced
  • 1 large onion, chopped
  • 5 cloves garlic, minced
  • 1 Tbs. chopped fresh thyme
  • 1/2 c. white wine
  • 1/3 c. flour
  • 4 c. whole milk at room temperature
  • 1 c. chicken broth
  • 1/8 tsp. nutmeg
  • 12 oz. linguini, cooked
  • 1/4 c. chopped parsley
  • 1 c. Parmesan
  • 1/4 c. dried breadcrumbs

Preparation

Step 1

Melt 1 Tbs. butter and oil in pan. Add mushrooms and saute until liquid is evaporated. Add onion, garlic, thyme, and saute until the onion is transparent. Add wine and cook until evaporated. Combine with chopped chicken.

Melt 3 Tbs. butter in same pan. Add flour and whisk 2 minutes. Add cream, milk, broth, nutmeg, 1 3/4 tsp. salt and 3/4 tsp. pepper. Bring to boil. Cook uncovered until slightly thickened, about 10 minutes.

Combine with linguini, peas, chicken, and parsley. Toss

Put in 9x13"pan. Top with combined cheese and bread crumbs. Bake at 350 degrees for 30-40 minutes.
