Ingredients

  • 1 tablespoon canola oil
  • 4 cups chopped sweet onions (about 13/4 pounds)
  • 1/2 cup uncooked long-grained rice
  • 2/3 cup whole milk
  • 1 cup (2 ounces) shredded Swiss cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon ground allspice
  • 1 cup grated Parmesan cheese

Preparation

Step 1

Preheat oven to 325 degrees

Heat a large skillet over medium high heat. Add oil; swirl to coat. Add onions, sauté 5 minutes or until tender. Place onions in a large bowl

Cook rice in a large pot of boiling water for 5 minutes. Drain.

Lightly butter coat an 8-inch square baking dish.

Stir rice and next 5 ingredients (through allspice) into the baking dish. Sprinkle evenly with the Parmesan cheese.

Cover with foil and bake at 325 degrees for 40 minutes. Remove the foil and bake for an additional 5 minutes.
