Ingredients

  • Wafer crust
  • 3 1/2 cups vanilla wafers
  • 1/4 cup melted butter
  • FILLING
  • 8oz cream cheese
  • 1 egg beaten
  • 1/2 cup sour cream
  • 1 can sweetened condensed milk
  • 1 can (21 oz) cherry pie filling

Preparation

Step 1

heat oven to 275*
line a 9 inch pan with a double layer of parchment paper, cut and trimmed so that cake can be taken out of pan easily
Place vanilla wafer in food processor and process to coarse crumbs
add melted butter and process for 10 seconds to combine
press crest into pan and bake in center oven rack for 10 to 12 minutes
turn oven to 350*
combine cream cheese, beaten egg, sour cream and condensed milk in a large mixing bowl.
blend ingredients for one minute using an electric mixer
pour mixture into prepared crust
bake on the center oven rack for 35 minutes (center will jiggle)
remove from oven and cool one hour
top with cherry pie filling and chill before serving
