BLACK*****Easy Black Beans with Yellow Rice
By Unblond1
We both like this very much AND it's quick and easy. Combine the leftover rice with the leftover beans and the third serving makes a lunch for Dan.

Preparation
Step 1
Heat vegetable oil in a medium saucepan over medium heat. Add onion, celery and green pepper; cook, stirring occasionally, until tender. Add garlic and saute a minute or so more.
Stir in drained beans, tomatoes, sugar, oregano, basil, pepper, salt, hot sauce and a splash or two of chicken broth; bring to a boil. Reduce heat, and simmer, uncovered, 10-15 minutes or until thickened, stirring frequently; set aside if not serving immediately.
When ready to serve, reheat gently, add the chicken (and extra both if required) and heat through.
Remove from heat and stir in vinegar and fresh cilantro, if using.
Meanwhile, cook rice, with the addition of turmeric to the cooking liquid.
Serve hot black bean mixture over rice. Top with a bit of Tex Mex blend if desired (Optional)
