Chicken Wings with Salsa Verde

Ingredients
- Brine:
- 5 lbs. chicken
- 3/4 c. kosher salt
- 4 cloves smashed garlic
- 1 1/2 tsp. peppercorns
- Rub:
- 2 tsp. dried rosemary
- 2 tsp. white pepper
- 2 tsp. paprika
- 2 tsp. salt
- 2 tsp. granulated garlic
- 2 tsp. dried basil
- 1 tsp. oregano
- Salsa:
- 1/2 c. fresh basil
- 1/2 c. fresh parsley
- 1/2 tsp. red pepper flakes
- 1 Tbs. chopped garlic
- 1/2 tsp. capers
- 1 tsp. anchovy paste
- 1 Tbs. roasted red peppers
- 1 Tbs. chopped onion
- 2 Tbs. lemon juice
- Salt to taste
- 1/3 c. extra-virgin olive oil

Preparation
Step 1
Brine:
Boil water. Add spices and then cool 30 minutes. Brine the chicken for 4 hours.
Rub:
Combine all ingredients.
Salsa:
Combine all ingredients except the oil. Add oil slowly and puree in a food processor.
