Spicy Applesauce Cake

Ingredients

• 1 1/2 cups unsifted all-purpose flour
• 1 cup sugar
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 teaspoon cinnamon
• 1/2 teaspoon nutmeg
• 1/4 teaspoon allspice
• 1 Vz tablespoons cocoa
• 1/2 cup cooking oil
• 1 egg
• 1 cup applesauce
• 1/2 cup chopped pitted dates
• 1/2 cup raisins
• 1/2 cup chopped nuts

Preparation

Step 1

In large mixer bowl place flour, sugar, soda, salt, spices, cocoa, oil, egg and applesauce. Beat 2 minutes at lowest speed of mixer. Stir in fruits and nuts until blended. Pour into greased 12 cup plastic microwave fluted or straight-sided ring mold. Microwave at High 12 to 13 Minutes, rotating dish 1/4 turn every 3 minutes. Let cake stand 5 minutes before inverting.
