Ingredients
- 1 1/4 cups sugar
- 3/4 cup cooking oil
- 1 teaspoon vanilla extract
- 2 eggs
- 1 1/4 cups unsifted all-purpose flour
- 1/2 teaspoon salt
- 3/4 teaspoons baking soda
- 2 teaspoons cinnamon
- 2 1/4 cups raw grated carrots
- 1/2 cup chopped walnuts

Step 1
In large mixing bowl blend sugar, oil and vanilla. Add eggs and beat well. In small bowl, stir together flour, salt, soda and cinnamon. Add to sugar-egg mixture and mix in. Fold in carrots and walnuts. Pour batter into greased 12 cup plastic fluted tube dish.
Microwave at Medium High (7) 18 to 20 minutes, rotating dish 1/4 turn every 6 minutes. Let stand directly on heat-proof counter or wooden board to cool. Frost with Cream Cheese Frosting, if desired.
Cream cheese Frosting: in 2-qt. casserole place 1 lb. pkg. confectioners sugar. Place 1 pkg. (8-oz.) cream cheese, 6 tablespoons butter and 2 teaspoons vanilla extract over top.
Microwave at High (10) for 1 minute, just until ingredients can be beaten together.
