Cauliflower Roasted with Garlic and Sweet Basil

this is my take of the Roasted Cauliflower Recipe. I use fresh Sweet Basil and that makes all the difference in this wonderful yummy Vegetable dish. If you really like a lot of herbs, feel free to add your own spin onto the dish.

Ingredients

  • 1 large head of Cauliflower, separated into Florets
  • 2 Tablespoons of (minced) fresh garlic
  • 3 Tablespoons of Extra Virgin Olive Oil
  • 2 Tablespoons of (finely chopped), fresh sweet Basil
  • Salt and Black Pepper to taste
  • 1/2 cup of Parmesan Cheese
  • 1 Tablespoon (chopped) fresh parsley for topping and garnish

Step 1

Preheat the oven to 450 degrees F. Grease a large casserole dish or an 9X13 pan. Check to be sure you can broil in the pan as you will be using the broiler the last 5 minutes for browning and melting cheese.

Place the olive oil and garlic into a large resealable zip type bag. Add Cauliflower and Basil and seal, now carefully turn the bag all around to coat Cauliflower but be careful not to break up the florets too much for even baking. Pour contents of bag into the prepared casserole dish, and season with Salt and pepper to your tastes.

Bake for 15 minutes. Carefully stir the Cauliflower for more even cooking. Bake for another 10 minutes. Turn on Broiler, remove dish. Top the Cauliflower with the Parmesan Cheese ad parsley, now broil for 3 to 5 minutes, until golden brown, and serve.
