Winter Roots Salad

Ingredients
- 1 daikon radish
- 2 carrots
- 2-3 red radishes
- 1 beet
- 1/4 cup olive oil
- 2 tbsp. apple cider vinegar
- 1 tsp. honey
- 1/4 tsp. sea salt
- Parsley

Preparation
Step 1
Wash all the vegetables. With a hand grater or food processor, grate the daikon, carrots and radishes. Peel the beet and grate that, too. Put the grated veggies into a large mixing bowl. Whisk dressing ingredients. Pour dressing on top of grated veggies and toss a couple of times. Let the salad marinate for about 15 minutes. Drain any excess liquid. Place Winter Roots salad on individual plates and garnish with fresh parsley.
@nadinechristensencsoman:disqus – the first place to be positively affected would be the mouth and taste buds. After that, probably the liver would benefit due to the spicy radishes and the colon as well.
