Blueberry Pie Filling

Basic pie filling without tapioca.

Ingredients

  • 4 cups fresh or frozen blueberries
  • 1 cup sugar
  • 3 Tbls cornstarch or 6 Tbls flour
  • 1/2 tsp grated lemon peel
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup water
  • 2 Tbls lemon juice

Preparation

Step 1

Mix dry ingredients in saucepan. Whisk in water gradually. Bring to a boil, add blueberries and cook 3 to 4 minutes until clear and thickened, stirring gently and constantly. Remove from heat, add lemon juice and stir gently. Use in recipes calling for blueberry pie filling.
