Ingredients
- 1 pound butter, softened
- 6 cloves roasted garlic (in 1/4 cup e.v.o.o.)
- 3 cloves minced garlic
- 2 tablespoons fresh parsley, chopped
- 1/2 cup
- Parmesan cheese, grated
- Salt and pepper to taste

Step 1
Mash the roasted garlic in the olive oil. Whip butter and the add the mashed, roasted garlic. Add the cheese, salt and pepper and whip another 2 minutes. Finally, add the parsley and whip until it is light and fluffy.
Store, wrapped well in the refrigerator for up to a week or freeze for up to four months.
