Virginia Hamsik's Waffles

Virginia Hamsik had a waffle house in downtown Portland Oregon. People lined up for her waffles. Her daughters shared this recipe at their mom's memorial service. Her special waffles will continue to live on through those who make them.

Ingredients

• 1 quart Buttermilk
• 5 Eggs - separate whites and yolks
• 4-1/2 cups Flour
• 1/2 cup Sugar
• 1-1/4 cubes Butter
• 3 teaspoons Baking Soda

Preparation

Step 1

Mix buttermilk and egg yolks only in a bowl. Add flour, sugar and melted butter. Mix until combined.

In another bowl, beat egg whites until stiff. Gently fold egg whites into batter. Do not over combine, just until egg whites are barely mixed in.

Light and airy waffles.
