POTATO SOUP

Original recipe was from an Amish cookbook I bought at the Pennsylvania State Museum in the mid-90's. I tweeked it just a little - left out the hard boiled eggs and added the Kielbasa. FANTASTIC recipe!

Ingredients
- POTATO SOUP
- 3 TBS butter
- 5 large potatoes
- 3 stalks celery, chopped (optional)
- 2 tsp. salt (or to taste)
- Hillshire Farms Polish Kielbasa, sliced and fried
- 2 large onions, diced
- 3 TBS parsley flakes (optional)
- 2 large carrots, chopped (optional)
- 2 cups boiling water
- WHITE SAUCE
- 4 TBS butter
- 3 TBS flour
- 1 tsp salt
- 1/4 tsp pepper
- 2 1/4 cups milk

Preparation
Step 1
Cook potatoes until they are just about soft. Saute onion in butter until tender. Do not drain. Add remaining ingredients to potato pot,except white sauce - and cook until vegetables are tender. Add white sauce and stir until blended. Add the fried, smoked sausage. Simmer until ready to eat.
WHITE SAUCE ~
Stir flour in drippings from kielbasa. Slowly add milk and stir constantly. Add salt and pepper to taste. Stir until bubbly and thick. Add to Potato Soup.
