Ingredients

  • 1/4 lb diced bacon
  • 2 tblsp butter
  • 1 chopped onion
  • 3 celery stalks, chopped
  • 1 jalapeno, diced
  • 1 tblsp thyme
  • 3/4 teas chili powder
  • 3 cups chicken broth
  • 2 eggs
  • 1 cup pepper jack cheese, diced
  • 8 cups toasted white bread cubes
  • 6 cups cornbread, crumbled

Step 1

In a large deep skillet saute the bacon with butter. Remove the bacon. Add the onion, celery, jalapeno, thyme, and chili powder. Season with salt and pepper to taste. Simmer the chicken broth. In a large bowl, mix the eggs, cheese, and bacon. Combine the bread cubes, cornbread, egg/bacon mix, and veggies in a bowl. Spread in a buttered 9x13 pan. Dot the top with butter, cover and bake at 350 for 30 minutes. Uncover and bake until golden, 20 more minutes.
