Ingredients

  • 1 medium size pumpkin, cooking type
  • 6 granny smsith apples, peeled, cored and chopped
  • 1 1/2 " piece fresh ginger root, peeled
  • 1 Tbsp. grated nutmeg
  • 1 Tbsp. ground cinnamon
  • cup chopped walnuts
  • 1 (16 oz) can whole berry cranberry sauce
  • 1 (20 oz) can pineapple chunks, drained
  • 3/4 cup brown sugar
  • 1/2 cup golden raisins
  • 1/2 cup dark rum, optional

Preparation

Step 1

Place baking stone on rack (or a thick baking sheet) and poisition rack so the suffed pumpkin will bake in the center of the oven. Preheat oven to 350 degrees.

Cut a circle in top of pumpkin, and set top aside. Scoop out seeds with a metal spoon.

In a largbe bowl, combine apples, nutmeg, cinnamon, walnuts, cranberry sauce, pineapple, brown sugar, raisins, and rum. Press ginger in a garlic press, and stir in. Place mixture into cleaned pumpkin, and replace top.

Set pumpkin directly on baking stone, or place on a thick baking sheet. Bake for 1 hour or until pumpkin begins to soften. Remove from oven, and stir so that some pieces of pumpkin fall into the apple mixture.
