  • 2 cups white sugar
  • 12 oz or 2 cups semisweet chocolate chips, melted and cooled
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup confectioners’ sugar
  • 1/3 cup granulated sugar for rolling.

Preparation

Step 1

In a large bowl, mix together flour, cocoa powder and salt . Combine sugar, cooled chocolate, eggs and oil in mixer bowl. Beat on medium speed until blended. Gradually add flour mixture, beating on low speed until blended. Refrigerate, covered until firm enough to shape, about 1 hour or overnight.

Preheat oven to 350 degrees. Line cookie sheets with parchment paper. If not using parchment paper, coat the cookie sheets with cooking spray. Place confectioner’ sugar into a small bowl. Roll dough into one inch balls. Coat each ball in white sugar and then confectioners’ sugar before placing onto prepared cookie sheets.

Bake in preheated oven for 8-10 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks or wax paper to cool.
