- 2 c heavy cream
- 1/2 c sweetened condensed milk
- 2 c light corn syrup
- 1/2 c water
- 2 c sugar
- 1 stick butter
- salt and vanilla extract

Step 1
1. Prepare 9x9 or 8x8 square pan by lining it wtrh aluminum foil and spraying with nonstick spray.
2. Combine the cream and condensed milk in large saucepan, place over low heat. Do not boil. Add the butter.
3. In a medium saucepan, combine corn syrup, water,and sugar over medium -high heat. Stir until sugar dissolves, using pastry brush and water (if needed) to wash down sides of any crystals.
4. Insert candy thermonmeter and reduce heat to medium. Allow to come to a boil and bring temp to 250 degrees.
5. Carefully add sugar mixture to milk/butter mixture (it will boil and double in size).
6. Continue to cook caramel, stirring constantly, easy, so it doesn't scorch. Don't let spoon touch bottom of pan. Cook until temperature reaches 344 degrees. Take off heat; add 2 t of vanilla extract and 1/2 t salt. Mix.
7. Pour into prepared pan - do not scrape candy from bottom of saucepan. Allow candy to sit overnight.
8. Place piece of waxed paper on counter and lift caramel from pan using foil as handles. Flip top of the caramel onto the waxed paper and peel off foil.
9. Cut into 1' squares and wrap in waxed paper.
