Ingredients
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) chickpeas , drained and rinsed
- 1 red pepper, diced
- 3 carrots, diced
- 3 celery ribs, diced
- 1/2 red onion, diced
- 1/3 cup fresh cilantro, chopped
- 1/4 cup extra virgin olive oil
- 3 limes, for juice
- 1 teaspoon ground cumin
- to taste cayenne pepper
- to taste sea salt

Preparation
Step 1
Whisk extra virgin olive oil, lime juice, cumin, cayenne and sea salt in a bowl until blended.
Add the rest of the ingredients and the dressing to a bowl and toss!
Refrigerate for a couple hours before serving to get all the flavors mixed together.
Taste and adjust the seasoning as needed.
