Ingredients
- 1 1/2 cups grape tomatoes
- 1 tbs olive oil
- 1 tsp thyme
- salt/pepper
- 8 oz linguine
- 1 cup heavy cream
- 2 tsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbs chopped parsley
- 3/4 pound large shrimp, shelled and deveined
Preparation
Step 1
Preheat oven to 375. In a large oven proof skillet, toss tomatoes with olive oil, thyme, salt/pepper. Roast for 25 minutes, until they start to split and brown.
Add cream to tomatoes, bring to a simmer. Cook over medium heat until cream thickens slightly, about 3 minutes. Add shrimp, simmer until cooked, about 2 minutes. Season with salt and pepper. Add linguine and lemon juice, toss, over low heat, to coat, about 1 minute. Add zest and parsley, toss.
