    cups grape tomatoes

    tbs olive oil

    tsp thyme

  • salt/pepper

    oz linguine

  • 1

    cup heavy cream

  • 2

    tsp fresh lemon juice

  • 1

    tsp lemon zest

  • 1

    tbs chopped parsley

  • 3/4

    pound large shrimp, shelled and deveined

Directions

Preheat oven to 375. In a large oven proof skillet, toss tomatoes with olive oil, thyme, salt/pepper. Roast for 25 minutes, until they start to split and brown. Add cream to tomatoes, bring to a simmer. Cook over medium heat until cream thickens slightly, about 3 minutes. Add shrimp, simmer until cooked, about 2 minutes. Season with salt and pepper. Add linguine and lemon juice, toss, over low heat, to coat, about 1 minute. Add zest and parsley, toss.
