Ingredients

  • 1 lb. lean ground
  • 1 medium onion, chopped
  • 2 cloves garlic minced
  • 1 tbsp. taco seasoning
  • 19 oz. can kidney beans, undrained
  • 12 oz. can kernel corn, undrained
  • 28 oz. can stewed tomatoes
  • 1 green pepper, chopped
  • 5 1/2 oz. can tomato paste
  • water
  • sour cream
  • grated cheddar cheese
  • tortilla chips

Preparation

Step 1

In a dutch oven, brown ground beef. Add onion and garlic and cook until onions are translucent.

Add taco seasoning, beans, corn, tomatoes, green pepper and tomato paste. Simmer slowly , stirring occasionally for 2 hours.

Add water to obtain desired consistency.

Serve garnished with sour cream and cheddar cheese. Tortilla chips can be served on the side or crumbled into the soup.
