Ingredients

  • Mac & Cheese:
  • 1 12 oz can albacore tuna (or chunk light tuna (drained)
  • OR 3 5 oz cans
  • 16 oz elbow macaroni or shells
  • 1 stick unsalted butter
  • 8 oz Velveeta (cubed)
  • 4 oz sharp cheddar (shredded)
  • 1 cup milk (or unsweetened almond milk)
  • salt & pepper to taste
  • 10.75 oz cream of mushroom soup

Preparation

Step 1

Mac & Cheese:

In large stockpot, prepare pasta al dente. Drain & return to stockpot.

While pasta is cooking, melt butter in large saucepan. Add milk and cheeses. Stir until cheese is melted. Add more milk or cheese to achieve desired consistency. Salt and pepper to taste.

Pour cheese sauce into stock pot with pasta. Combine well. Add milk or cheese to adjust consistency.

Cream of Mushroom Soup:

Whisk ingredients together in a medium saucepan. Stir in mushroom. Cook over medium heat until thickened.

Stir cream of mushroom soup into Mac & cheese. Flake tuna on a cutting board. Add to Mac & cheese mixture. Stir well.
